VEGAN MEXICAN HASH
how?
2 baby potatoes (diced)
6 button mushrooms (diced)
2 tsp olive oil
½ cup of sweet corn
2 roma tomatoes (diced)
1 bunch of coriander (torn or chopped
roughly)
1 corn tortilla (torn or chopped roughly)
heat oil in sauté, add diced potato. when
potato is starting to soften add diced mushroom. when potato is tender add
diced tomato. when tomato is softened slightly and warmed through add the sweet
corn and coriander. combine with tortilla pieces and remove from heat - serve!
