omg! i love mashed potatoes... and
after a solid hour of gym time i felt it was ok to indulge a little! i
had some potatoes that needed cooking and needed a carb base for my mix
of vegetables (asparagus, red cabbage and grilled tomatoes)
this was a quick, easy and really tasty meal and i definitely satisfied my longing for potato mash
i used 3 big potatoes, diced them up relatively small to reduce cooking time and filling the pot with just enough water to cover
cook on a medium boil for about 15 mins, drain, then add a rough 2/3 cup of light soy milk before blitzing with a hand mixer
my
creamy potato 'mash' was then served up with some lightly char-grilled
asparagus spears and tomato slices, along with some blanched red cabbage
- healthy and hearty!
