WEEKEND BREAKFAST
Vegan pancakes with friends |
How?
- 1 1/4 cup of all purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 teaspoon of ground cinnamon (optional)
- 2 tablespoons of canola oil
- 1/3 cup of water
- 1 to 1 1/4 cup of rice or soy milk
- 2 tablespoon of pure maple syrup
- 1 teaspoon of vanilla extract
Combine all dry ingredients
add all wet ingredients
mix until combined (a few lumps are fine - don't over mix the batter)
Cook for 3 minutes on one side and 1 minute on the other
Makes 8 x 4-5 inch pancakes
