ASIAN INSPIRATION

soba noodles w/ bok choy, edamame, tofu + coconut cream

since arriving in madrid i have been craving some asian inspiration dishes and was lucky enough to stumble across an asian supermarket (alimentacion) whilst roaming the streets of plaza de espana - i hit the jackpot with bok choy, tofu (yummmm!), frozen edamame, soba noodles and a 1L carton of coconut cream - consisting of almost half cream - half coconut milk (perfect for the whipped coconut cream recipe on healthy happy life which looked amaze!)
