STUFFED CABBAGE ROLLS VEGAN STYLE

using some left over brown rice, lentils and homemade spicy seitan sausage, i whacked together these tasty vegan stuffed cabbage roles in minutes!

how?

4 large nappa cabbage leaves, washed and thick stems removed (to allow for rolling)
left overs of your choice (i used 2 cups of cooked brown rice, 1 cup of cooked french lentils, 1 small spicy setian sausage (diced), 1/4 cup of frozen corn kernels and 1/4 cup of diced red capsicum)
kecap manis or sauce of choice for topping
1 teaspoon of sesame seeds, for garnish

combine your leftover filling ingredients in a bowl and stir to combine, season as desired. de-stem your cabbage leaves and place them on a plate and into the microwave for 30 seconds on high, this will soften your cabbage leaves so they are ready to roll.

take a spoonful of your filling mix and place it into the middle, toward the bottom, of your softened cabbage leaf. bring the side of your cabbage leaf into the middle and then wrap them up into little parcels from bottom to top. place into a steaming basket (or steamer) over boiling water seam side down. steam for 15 minutes to heat through and cook the cabbage.

serve drizzled with the sauce of your choice (i followed an asian inspired path and selected some kecap manis) and sprinkled with some sesame seeds - super simple and healthy!
