maybe this is sad... but for years i have been searching for a great [vegan] dahl recipe. i can now [very] happily declare that i have found it - yay! this dahl was prepared in a pressure cooker and was not only super simple to make but super delicious. 


1/2 cup of toor dal
1/2 cup of mung dal
1/2 cup of channa dal
6 cups of water
2 teaspoon of ginger, peeled and grated
1 teaspoon of turmeric
1 teaspoon of salt
1 teaspoon of garam masala
1 tablespoon of vegetable oil
1/4 teaspoon of asafetida powder
1 teaspoon of cumin seeds
2 teaspoon of ground coriander
1/2 teaspoon of cayenne pepper 

mix the three dals in a large bowl and rinse. cover with water and soak for at least 2 hours. drain off the soaking water and add the dals to your pressure cooker with the water, ginger, turmeric and salt. place the lid on the pressure cooker and set weight. bring to pressure then reduce the heat to medium and cook for 5 mins. cool the pressure cooker and remove the lid. simmer the dal over a medium heat for 10 mins. heat the oil in a separate pan, add the asafetida and cumin seeds and toast until golden brown. remove from the heat and add the ground coriander and cayenne. add this seasoning to the dal and mix to combine. your delicious [vegan] dahl is now ready to serve - dig in! 

serves 4-6
