VEGAN MEXICAN MILLET


ok! this seriously goes on my list titled "some of the most amaze things i have ever eaten!" this mexican millet creation was super easy to make and tasted too good to stop eating it!

how? 

1/2 cup of millet, rinsed
1 cup of tomato puree
1/2 cup of water
1/4 teaspoon of cumin seeds
1/2 teaspoon of garlic powder
1/2 teaspoon of chilli powder
salt and pepper to season
1 tablespoon of nutritional yeast flakes

place the rinsed millet into a saucepan and cover with the water and tomato puree. add the cumin seeds, garlic powder, chilli powder and salt and pepper. stir to combine. bring to the boil, then turn down to a slow simmer and cover. cook for 10 minutes, adding the nutritional yeast flakes. cook for a further 10 minutes (or until the liquid has been absorbed and the millet is tender). leave to stand for 5 minutes before 'fluffing' the grains with a fork. serve topped with green pepper + garlic topper - enjoy!
