1 cup of iceberg lettuce, roughly torn into pieces
1/2 cup of frozen edamame beans, thawed
1/2 cup of fresh coriander, roughly town into pieces
1 packet of udon noodles (roughly 1 cup)
1-2 teaspoons of sesame seeds
2 tablespoons of kecap manis
1 tablespoon of vegetarian oyster sauce

flash-fry the edamame beans for 2 mins, add the kecap manis, oyster sauce and a little water if required to thin sauce (roughly 1 tablespoon). add the noodles and stirfry for 3 mins. add the iceberg lettuce and coriander and stirfry until wilted (approximately 1 min). serve topped with a sprig of coriander and sprinkling of sesame seeds


  1. I'm making stir fry tonight, and this looks delicious! I need to get my hands on some udon - I loooove thick noodles.

    1. i'm such an asian supermarkets groupie (and often get a bit too excited... buying heaps of things that i either don't need or don't have a clue as to what they actually are!?) but nice thick noodles and tofu are always at the top of my shopping list! plus some nice hot chillies, fresh ginger and coriander too (if i am lucky enough to find any) enjoy that stir fry!
