MEXICAN FIESTA

looking for a quick and easy sunday night dinner? how about burritos! one of my weekend favorites 
how?
a few iceberg lettuce leaves, shredded
a tin/jar (~400g) of red kidney beans
1 tin of diced tomatoes
some diced red chilli (amount will depend on how hardcore you are)
1 cup of diced red capsicum
1/2 a large onion, diced
a pack of tortillas
vegan mayonnaise* (optional)

saute off the onion in a large frying/saute pan, when softened add the diced red capsicum. add the red kidney beans and crush slightly as these cook (about 5 mins) to thicken the mixture. add the tinned tomatoes and red chilli - cook for a further 5 mins to reduce

to serve: throw a tortilla into the microwave for about 10-15 seconds, spread with some vegan mayonnaise, add some shredded lettuce and a scoop of bean mix - fold and you are ready to go!



confused???



ok... so i didn't have the instructions (and got slightly distracted with my lettuce shredding whilst microwaving my burrito) on this attempt but it was definitely delicious!
