a little bit indulgent but using some good, clean fun ingredients! this pasta dish is quick and easy to prepare... and (if you dont want to cook the mushrooms in a separate pan) can be a one-pot-wonder!
- 1/2 pack of penne
- 10 button/portabello mushrooms (depending on size) sliced
- 1/4 of a large onion diced
- 2 small (individual portion) tubs of soy yoghurt
cook the penne in boiling water until al dente - drain and set aside whilst you prepare the sauce
saute the onion in the pasta pot until soft, add the mushrooms - cook until tender. stir through the soy yoghurt and return the cooked penne to the pot. stir to combine and cook to to heat through - serve!
