So much so that there have been times I've felt compelled to research whether my passion for pantry supplies was a classifiable disorder!? Unfortunately for my professionalism, my interest in shopping ends here - which means most mornings are spent staring in my wardrobe wondering whether gym clothes or pyjamas will cut it for work. But all jokes aside, and since I'm once again back at uni (and therefore away from my kitchen for the next few months), I thought a post on what inspiring ingredients are often found in my vegan pantry would be apt...

SPICY SESAME TOMATO SAMBAL
how?
2 teaspoons of cumin seeds
2 teaspoons of coriander seeds
4 teaspoons of dried chili flakes
2 tomatoes, deseeded
2 garlic cloves
2 tablespoons of tomato paste
3 tablespoons of rice wine vinegar
1 tablespoon of agave syrup
1 tablespoon of sesame oil
¼ cup of sesame seeds, toasted
in a small frying pan, lightly toast the cumin and coriander seeds with the chili flakes for 1-2 minutes until fragrant. transfer to an electric coffee grinder and grind to a fine powder. add this to a food processor or wet/dry mill with the remaining ingredients and blend to a paste consistency. pour into a sterilised recycled 400mL jar, label and use now or store in the fridge for later use with a variety of tasty vegan dishes.
